Each date is handpicked rather than machine-sorted. Ajwa is known for its dark colour and dense, soft flesh; Medjool for its size and chewy caramel texture. The two sit at opposite ends of the texture range — worth knowing before you order a mixed box.
Flavour differences between varieties

Sukkary leans soft and honey-toned, Khudri is chewier with the same honey note, and Ajwa is the least sweet of the four — closer to a rich, dense caramel than a sugar-forward date. If you want something to eat plain by the handful, Medjool or Sukkary are the easier entry point.
